- Se toma una sartén grande o un wok, se echa un poco de aceite de oliva y medio vaso de agua, se colocan los dos echalotes, se pone en el fuego y cuando comienza a calentar la preparación se colocan las pelotas de carne (albóndigas o polpette) de modo que comiencena dorar, para pasarlas hacerlas rodar con la sartén o wok, sin tocarlas, de modo que no se deshagan. una vez que todas estén doradas, se dejan reposar 5 o 6 minutos en el fuego, con la sartén o wok tapadas
- Transcurridos los 5 o 6 minutos se cubren las albóndigas con la salsa de tomate y se agrega el agua. La cantidad de salsa es a gusto. A la salsa de tomate se le pueden agregar condimentos tales como orégano y albahaca secas. Se deja a fuego lento durante 40/45 minutos, se apaga el fuego y se le agregan unas hojas de albahaca fresca, dejando reposar 5 minutos
