- Pelamos y desvenamos los camarones



- Molido de camarones : en un procesador de comida licuamos los camarones hasta lograr una textura como de carne molida.



- En un bowl, agregamos el camarón molido, 2 dientes de ajo finamente picado, el huevo, el perejil, mezclando todo homogéneamente para que se integren los sabores. Agregamos primero 1 taza de pan molido, amasamos y dependiendo de la consistencia agregamos hasta 1/2 taza más de empanizador, hasta lograr una masa firme. Hacemos bolitas del tamaño de una bolita de ping-pong. Reservamos






- Fumet de camarón: en una olla con 2-3 litros de agua, agregamos las cabezas y cáscaras del camarón que pelamos, orégano, laurel, pimienta negra en bolitas, apio, cebolla, sal al gusto y dejamos hervir por 20 min. transcurrido 20-25 min, pasamos el contenido a la licuadora y agregamos un poco del mismo caldo, licuamos y colamos el contenido y lo regresamos a la misma olla. Reservamos






- Caldillo: en otra olla agregamos los jitomates, la cebolla, los chiles de árbol al gusto y tolerancia al picante, el chile guajillo. Hasta que revienten los jitomates. Licuamos y reservamos.






- Fusión de los caldos: en la olla donde preparamos el fumet de camarón o en una de barro, agregamos el caldillo sin colar. Agregamos primero las zanahorias y las papas y dejamos hervir 20 minutos hasta que se sienta la papa blanda, agregamos las calabazas y dejamos hervimos por 10 minutos más para integrar los sabores y potencializar el caldo





- Agregamos las bolitas de camarón y dejamos cocer por 10 minutos aproximadamente y verificamos sazón.



- Servimos en un plato hondo
